3 large eggs
1 large apple, peeled and finely diced
1/2 cup rolled oats or almond flour
1/4 cup maple syrup or honey
1 1/2 teaspoons ground cinnamon
1 teaspoon vanilla extract
1 teaspoon baking powder

  • Preheat the oven to 350°F (175°C). Lightly grease or line an 8×8-inch baking dish.
  • In a large mixing bowl, whisk together the cottage cheese and eggs until mostly smooth.
