  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a 9 x 4 inch baking tin by greasing and lining it with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In a mixing bowl, cream the butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually add half the dry ingredients to the butter mixture, followed by all the buttermilk, then fold in the remaining dry ingredients until just combined.
  5. In another bowl, toss diced apples with brown sugar and remaining cinnamon.
  6. Layer half of the batter in the prepared tin, sprinkle half of the apple mixture on top, swirl gently with a knife. Repeat with remaining batter and apples.
  7. Bake for about 55 to 65 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a cooling rack.
