5 medium apples, peeled, cored, and chopped into 1/4-inch cubes
1/3 cup brown sugar, packed
2 tablespoons granulated sugar
2 teaspoons ground cinnamon
1 teaspoon fresh lemon juice
1 cup water
2 tablespoons cornstarch
8 (6-inch) flour tortillas
1/3 cup granulated sugar
1 1/2 teaspoons ground cinnamon
Non-stick cooking spray

Instructions

  • In a medium saucepan over medium heat, combine the chopped apples, brown sugar, granulated sugar, cinnamon, lemon juice, and water. Stir well.
  • Bring to a gentle simmer and cook for 8–10 minutes, stirring occasionally, until the apples begin to soften.
  • In a small bowl, mix the cornstarch with 1–2 tablespoons of water to create a slurry. Stir it into the apple mixture.
  • Continue cooking for 2–3 minutes, until the mixture thickens into a dip consistency. Remove from heat and let cool slightly.
  • Preheat the oven to 375°F (190°C).
  • Cut each tortilla into 6–8 wedges and arrange them in a single layer on baking sheets.
  • Lightly coat the tortilla wedges with non-stick cooking spray.
  • In a small bowl, mix the granulated sugar and cinnamon. Sprinkle evenly over the tortillas.
  • Bake for 8–10 minutes, or until golden and crisp. Let cool completely to crisp up further.
