  • 1/2 teaspoon salt
  • 1 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup apple cider
  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. Preheat your oven to 325°F (163°C) and line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream together the unsalted butter, granulated sugar, and light brown sugar until fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then incorporate the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and spices.
  5. Gradually add the dry ingredients to the butter mixture while alternating with the apple cider.
  6. Gently fold in the grated apples until just combined.
  7. Pour the batter into your prepared loaf pan and bake for about 55 to 60 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool for 15 minutes in the pan before transferring to a wire rack to cool completely.
