  • 3 pounds chuck roast
  • 2 pounds short ribs (bone-in)
  • 2 tablespoons avocado oil
  • 1 large onion (quartered)
  • 1 garlic bulb (cut the tip off)
  • 8 guajillo chiles
  • 4 ancho chiles
  • 5 cups water
  • 2 cups beef broth
  • Fresh cilantro for serving
  • Fresh lime juice for serving

Instructions

  1. Chop the chuck roast into 2-inch pieces, pat dry, and season with salt and pepper.
  2. In a large Dutch oven, heat avocado oil over medium-high heat. Sear the meat for 2-3 minutes per side until browned; work in batches if necessary.
  3. Add seared meat back into the pot along with onion, garlic, bay leaves, dried peppers, beef broth, and enough water to cover.
  4. Stir in chicken bouillon, oregano, cumin, and salt. Bring to a boil and skim any impurities.
  5. Blend softened peppers with onion and garlic until smooth; return to pot.
  6. Cover and simmer for about 3 hours until meat is tender.
  7. Skim grease before serving; enjoy as a stew or in tacos garnished with cilantro and lime juice.
