  • 2 tablespoons cornstarch
  • 2 1/2 cups whole milk
  • 1 large piece lemon peel (including pith)
  • 1 large piece orange peel (including pith)
  • 1 cinnamon stick
  • 5 large egg yolks
  • 1/2 cup superfine sugar (plus extra for caramelization)

Instructions

  1. Heat the milk in a heavy-based saucepan over medium heat with lemon peel, orange peel, and cinnamon stick until simmering. Remove from heat.
  2. In a separate bowl, dissolve cornstarch in a splash of water to create a slurry.
  3. Whisk together egg yolks and superfine sugar until pale, then mix in the cornstarch slurry and a splash of hot milk.
  4. Strain the citrus peels and cinnamon from the milk, then slowly whisk the milk into the egg mixture.
  5. Return to low heat, whisking constantly until thickened to pudding consistency.
  6. Divide into ramekins or clay dishes and cover with plastic wrap to chill for at least 4 hours or overnight.
  7. Once chilled, sprinkle sugar on top and caramelize using a blowtorch or under a broiler until golden brown.
  8. Serve topped with fresh fruit if desired.
