  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder or chili powder
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop sweet potatoes into 1/2 inch pieces and onion into 1-inch chunks. Place them on a lined baking sheet.
  3. Drizzle with olive oil, salt, garlic powder, and chipotle (or chili) powder; toss to coat evenly.
  4. Roast for 20 minutes.
  5. Add chopped broccoli to the baking sheet, drizzle with remaining olive oil and salt, and push the sweet potatoes and onions to one side. Place chicken breasts on the other side and brush with 1/4 cup BBQ sauce.
  6. Return to the oven for another 15-20 minutes until chicken is cooked through.
  7. Shred chicken with forks, mix in remaining BBQ sauce, and assemble bowls by dividing all ingredients evenly.
