Ingredients

Scale
  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 3 cups low-sodium beef broth
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 3 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Sauté the diced onion until softened (about 3-4 minutes).
  2. Add the ground beef to the skillet and cook, breaking it apart until browned. Drain excess fat if necessary.
  3. Stir in the minced garlic and sauté for about a minute until fragrant.
  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper. Stir well to combine.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice absorbs the broth.
  6. In a small saucepan on low heat, melt remaining butter and stir in milk, Parmesan cheese, and cheddar until creamy.
  7. Pour the cheese sauce into the skillet with beef and rice; mix thoroughly.
  8. Cook uncovered for an additional few minutes before serving warm.
