  • 4 large eggs
  • 4 corn tortillas
  • 2 tablespoons olive oil
  • ½ cup homemade or store-bought salsa
  • Sliced avocado
  • Guacamole
  • Sour cream (optional)
  • Crumbled Cotija cheese (or feta)
  • Fresh cilantro
  • Pickled red onions
  • Hot sauce

Instructions

  1. Blend salsa ingredients until smooth or set aside store-bought salsa.
