  • 1/2 cup softened butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup mashed ripe banana (about 2.5 medium bananas)
  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats (blended into a powder)
  • 1 teaspoon baking soda
  • 1.5 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream
  • Optional: spices and nuts

Instructions

  1. Preheat oven to 350°F and prepare a 9×5 inch loaf pan.
  2. Toast optional nuts on a baking sheet for about 5–7 minutes until fragrant.
  3. In a mixing bowl, cream together softened butter and both sugars until fluffy.
  4. Add eggs one at a time, then mix in mashed bananas and vanilla extract.
  5. Combine flour, oat powder, baking soda, baking powder, salt, and optional spices; gently fold into wet mixture.
  6. Fold in sour cream and toasted nuts if using.
  7. Pour batter into prepared pan and bake for 55–65 minutes or until a toothpick comes out clean.
  8. Cool on a rack for at least twenty minutes before slicing.
