  • 250 g caster sugar
  • 1 teaspoon vanilla extract
  • 4 medium eggs
  • 250 g self-raising flour
  • 3 tablespoons milk
  • Zest of 1 orange
  • 200 g icing sugar
  • 2 tablespoons freshly squeezed orange juice
  • 1-2 tablespoons orange zest

Instructions

  1. Preheat your oven to 180℃ (160℃ for fan ovens) and line an 8×10-inch baking tin with baking paper.
  2. In a large bowl, whisk the softened butter and caster sugar until light and fluffy. Stir in the vanilla extract.
  3. Add eggs one at a time, mixing well after each addition. Gradually incorporate self-raising flour and milk until smooth. Fold in orange zest.
  4. Pour the batter into the lined tin and bake for 25-30 minutes or until a toothpick comes out clean.
  5. Allow to cool for 10 minutes before transferring to a wire rack. Once completely cool, prepare the glaze by mixing icing sugar with orange juice and zest, then drizzle over the cake.
