  • 1 cup uncooked quinoa
  • 2 cups vegetable broth or water
  • 2 (15 oz) cans black beans
  • 1/2 cup sliced green onion
  • 1 cup chopped cilantro
  • 1 cup crumbled cotija cheese or feta for a substitute
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 shallot, minced
  • 1 Tbsp honey
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper

Instructions

  1. Rinse quinoa under cold water and cook in vegetable broth or water according to package instructions. Once cooked, let sit for 5 minutes.
  2. In a large bowl, whisk together lime juice, olive oil, minced shallot, honey, sea salt, and black pepper until emulsified.
  3. While quinoa cooks, drain and rinse black beans; chop cilantro and crumble cotija cheese.
  4. Fluff cooked quinoa with a fork and add to the bowl with the vinaigrette along with black beans, cilantro, and cotija cheese. Toss until well combined.
  5. Chill in the refrigerator for at least one hour before serving to enhance flavors.
