  • 1 lb Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 6-8 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning (divided)
  • Salt and pepper to taste

Instructions

  1. Pound chicken breasts to an even thickness of about 1/4 inch. Rub them with olive oil and season both sides with 2-3 tablespoons of blackened seasoning.
  2. Heat a skillet over medium-high heat and add 2 tablespoons of olive oil. Cook the chicken for about 3-4 minutes until dark amber on one side, then flip and reduce heat to low. Add 2 tablespoons of butter and minced garlic; cook for another 5-6 minutes until the internal temperature reaches 165°F.
  3. Remove chicken from skillet and let rest under foil before slicing.
  4. In the same skillet, melt remaining butter over medium heat, sauté remaining garlic for 1-2 minutes, then stir in heavy cream and additional blackened seasoning. Allow to simmer until thickened.
  5. Cook pasta according to package instructions, reserving some pasta water before draining.
  6. Add parmesan to the sauce until melted, mix in reserved pasta water, then combine noodles with sauce before topping with sliced chicken.
