  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Rinse fresh blueberries or use frozen without thawing; toss them with 1 tablespoon of flour.
  3. In a large bowl, cream together softened butter, cream cheese, and sugar until light and fluffy. Add eggs one at a time and mix in vanilla.
  4. In another bowl, whisk together remaining flour, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture; mix on low speed until just combined.
  6. Gently fold in the prepared blueberries using a rubber spatula. Pour batter into the loaf pan.
  7. Bake for about 55-70 minutes or until a skewer comes out clean from the center.
  8. Allow cooling for 15-20 minutes before transferring to a wire rack to cool completely.
