  • 4 ounces lion’s mane mushrooms
  • 4 ounces cremini mushrooms
  • 2 cups thawed frozen green peas
  • Fresh garlic
  • Chives
  • Thyme
  • Lemon zest
  • Roasted red peppers

Instructions

  1. Heat avocado oil in a non-stick skillet over medium-high heat. Add lion’s mane and cremini mushrooms; season with salt and pepper. Sauté until golden brown (about 5 minutes).
  2. Stir in minced garlic; cook for another minute.
  3. Add peas, chives, thyme, lemon zest, and roasted red peppers; mix well.
  4. Incorporate cooled jasmine rice into the skillet mixture; press down with a spatula to form an even layer.
  5. Cook undisturbed for about 5 minutes until the bottom is crispy.
  6. Carefully flip sections to crisp other parts if desired. Serve hot garnished with extra chives.
