  • 2 large lamb shanks
  • Fresh rosemary
  • 8 garlic cloves
  • 2 cinnamon sticks
  • Thyme
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 2 carrots, chopped
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 3 bay leaves
  • 1 cup fresh plum tomatoes, chopped
  • 4 cups chicken stock
  • Salt and pepper, to taste
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season lamb shanks with salt and pepper. In a heavy-bottomed Dutch oven, sear the lamb until browned on all sides, then set aside.
  3. Sauté chopped onions, celery, carrots, and garlic in the same pot until softened.
  4. Stir in smoked paprika, ground cumin, cinnamon sticks, rosemary, thyme, bay leaves, and crushed red pepper flakes; cook for 1 minute.
  5. Return the lamb to the pot, add chopped tomatoes and chicken stock until slightly covered.
  6. Cover the pot and braise in the oven for 2 to 2.5 hours until tender.
  7. Serve hot over creamy mashed potatoes or polenta.
