  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 cups apple vinegar
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and pepper and brown them on all sides for about 3-4 minutes each side. Remove and set aside.
  3. In the same pot, sauté chopped onion, carrots, and celery until softened (5-7 minutes), then add minced garlic and cook until fragrant (1 minute).
  4. Deglaze the pot with apple vinegar, scraping up any browned bits. Stir in beef broth, tomato paste, thyme, and bay leaves; bring to a simmer.
  5. Return the short ribs to the pot, cover with a lid, and braise in the oven for about 3 hours until meat is tender and falls off the bone.
  6. Serve drizzled with sauce over the ribs and garnish with fresh parsley.
