  • 3 large sweet potatoes (for baking)
  • ½ cup cooked and crumbled turkey bacon
  • 2 tablespoons unsalted butter
  • ¼ cup shredded white cheddar cheese
  • 6 large eggs
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • Minced scallion (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prick each sweet potato several times with a fork to create steam vents.
  3. Coat sweet potatoes in canola oil and sprinkle with salt. Bake on a baking sheet for 60-90 minutes until fork-tender.
  4. Once baked, slice each potato in half lengthwise and scoop out the flesh into a mixing bowl.
  5. Add turkey bacon, butter, and cheese to the bowl, mixing until combined.
  6. Spoon filling back into the skins, creating a well for each egg.
  7. Top with raw eggs, seasoning with salt and pepper.
  8. Return to the oven and bake for an additional 15-20 minutes until the egg is set.
  9. Remove from oven and garnish with minced scallion before serving.
