  • 1 cup chopped potato
  • 3/4 cup chopped broccoli stems
  • 2 cups finely chopped broccoli florets
  • 1 cup chopped leek (white and light green parts)
  • 4 cloves garlic (minced)
  • 4 cups chicken or vegetable broth
  • 1-2 cups water
  • 1 tbsp mustard powder
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup dried orzo
  • 8 oz sharp cheddar cheese (grated)
  • 1 cup heavy whipping cream
  • 5-7 slices turkey slices

Instructions

  1. Preheat your oven to 400°F.
  2. In a large pot, heat olive oil and butter over medium heat. Sauté chopped leek, broccoli stems, and potato for about three minutes.
  3. Add minced garlic, salt, pepper, and mustard powder; stir for one more minute.
  4. Pour in chicken or vegetable broth and water (1 to 2 cups). Bring to a bubble, then simmer uncovered for about 10 minutes until the potatoes are tender.
  5. Meanwhile, place turkey slices on a lined baking sheet and bake for 10-12 minutes until crispy.
  6. Blend the soup until smooth using a blender or immersion blender. Return it to the pot and bring to a gentle simmer.
  7. Add dried orzo pasta while stirring frequently, then incorporate chopped broccoli florets and heavy cream after about five minutes.
  8. Continue cooking until the orzo is tender (about another four to five minutes) before stirring in grated cheddar cheese until melted.
