  • 1 tbsp heavy cream
  • 1 1/4 cup all-purpose flour
  • 3 cups kataifi (shredded phyllo dough)
  • 1 cup pistachio cream
  • 2 cups heavy cream (for ganache)
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking pan.
  2. Brown the butter in a saucepan over medium heat until golden, then let it cool slightly.
  3. In a bowl, mix dry ingredients: flour, baking soda, baking powder, and salt.
  4. Combine sugars with the brown butter, then add egg, cream, and vanilla.
  5. Fold dry ingredients into wet mixture, followed by chocolate chips.
  6. Spread mixture in the pan and bake for 22-27 minutes until golden.
  7. For the filling, toast kataifi with butter until crispy; mix with pistachio cream.
  8. For ganache, heat cream and pour over chocolate; stir until smooth.
  9. Layer pistachio filling over cooled cookie base, top with ganache, and chill before serving.
