Instructions

  2. Season chicken with salt, pepper, and garlic powder.
  3. In a skillet, heat olive oil over medium-high heat, add chicken, and brown for about 4 minutes.
  4. In a mixing bowl, whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch until smooth.
  5. Transfer chicken to the baking dish, top with pineapple chunks and drizzle with glaze.
  6. Cover with foil and bake for 25–30 minutes until chicken reaches 165°F.
  7. Remove foil and bake uncovered for an additional 5–10 minutes to caramelize the glaze.
