  • ½ pound lean ground beef
  • ½ cup diced yellow onion
  • 8 ounces Colby jack cheese, shredded
  • 12 ounces tortilla chips (about of a bag)
  • 2 tablespoons taco seasoning
  • Optional garnishes: sour cream, diced tomatoes, chopped fresh cilantro

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. In a large skillet over medium-high heat, cook the ground beef with diced onion, salt, and pepper until browned (about 6–7 minutes). Drain excess fat.
  3. Stir in water and taco seasoning; cook for another 2–3 minutes until most liquid evaporates.
  4. Layer half of the shredded cheese in a greased bundt pan, followed by half of the beef mixture and one-third of the tortilla chips.
  5. Repeat layering with remaining cheese and beef; finish with another third of tortilla chips.
  6. Bake for about 10 minutes until heated through and cheese is melted.
  7. Invert onto a heatproof plate and serve warm with optional garnishes.
