Ingredients

Scale
  • 8 ounces full-fat cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 (15.25 ounce) box yellow cake mix
  • 1/2 cup sprinkles
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat together the softened cream cheese, butter, egg, and vanilla extract using an electric mixer until smooth.
  3. Gradually stir in the yellow cake mix until a thick dough forms.
  4. Fold in the sprinkles gently to avoid color bleeding.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Scoop out dough using a cookie scoop or tablespoon and roll into balls, then coat each ball with powdered sugar.
  7. Place on prepared baking sheets about 2 inches apart and bake for 10-12 minutes until edges are set but centers remain slightly soft.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
