  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups chopped green cabbage
  • 2 medium carrots (sliced)
  • 4 cups low-sodium beef broth
  • 3 cans (8 oz each) tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tbsp light brown sugar
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Add ground beef, seasoning with salt and pepper, and cook until browned.
  2. Stir in diced onion and minced garlic, cooking for an additional 2-3 minutes until tender.
  3. Incorporate chopped cabbage and sliced carrots into the pot. Pour in the tomato sauce and beef broth.
  4. Add uncooked rice, bay leaf, and light brown sugar; stir to combine.
  5. Bring the mixture to a simmer and cook for about 25 minutes until the rice is tender, stirring occasionally.
  6. Remove the bay leaf before serving and garnish with freshly chopped parsley.
