  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream (or half-and-half)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 10 oz. Rotel diced tomatoes with green chilies
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 1 teaspoon brown sugar
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • 1-2 tablespoons olive oil (or avocado oil)
  • 3 tablespoons flour
  • 10 oz. Rotel diced tomatoes with green chilies (juice reserved)
  • ¾ cup cheddar jack cheese (shredded)
  • 2 teaspoons lime juice
  • Lime wedges
  • Fresh cilantro (roughly chopped)

Instructions

  1. Season chicken breasts with Cajun seasoning. Pat dry.
  2. In a skillet, heat olive oil over medium-high heat and sear chicken for about 6-7 minutes per side until cooked through. Set aside.
  3. In the same skillet, melt butter, add garlic, and sauté until fragrant.
  4. Whisk in flour to form a roux, then gradually add chicken broth and heavy cream.
  5. Stir in honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, red pepper flakes, and reserved Rotel juice.
  6. Bring to a simmer, return chicken to the skillet along with Rotel tomatoes, and cook for another 5-7 minutes.
  7. Top with cheddar jack cheese until melted and drizzle with lime juice before serving.
