  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 tablespoon brown sugar
  • 3 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 cup jasmine rice
  • 2 cups water (for rice)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cut chicken thighs into bite-sized pieces and season lightly with salt and pepper.
  2. Marinate chicken in a mixture of soy sauce, sesame oil, garlic, ginger, and brown sugar for 10 minutes.
  3. Rinse jasmine rice under cold water until clear. Boil water in a saucepan, add rice, reduce heat to low, cover, and simmer for about 15 minutes until cooked.
  4. Heat oil in a large pot over medium-high heat. Sauté marinated chicken until caramelized (about 5-7 minutes).
  5. Add chicken broth and rice vinegar to the pot; bring to a boil then reduce to simmer.
  6. Slowly mix in cornstarch slurry while stirring to thicken; simmer for an additional 5 minutes.
  7. Serve the caramelised chicken over jasmine rice and garnish with sliced green onions.
