  • Juice of 1 lime
  • 2 teaspoons jerk seasoning
  • 4 boneless skinless chicken breasts (4-5 ounces each)
  • 1 medium mango, peeled and chopped
  • 1 Roma tomato, chopped
  • 2 tablespoons red onion, chopped
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon fresh lime juice

Instructions

  1. In a mixing bowl, combine teriyaki sauce and lime juice; add jerk seasoning.
  2. Add chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours.
  3. Prepare mango topping by chopping mango, tomato, and red onion. Mix with cilantro and lime juice in another bowl.
  4. Preheat grill or grill pan over medium-high heat. Remove chicken from marinade and grill for about 7 minutes on each side or until fully cooked (internal temp should reach 165°F).
  5. Let chicken rest for a few minutes before slicing. Top with mango salsa and serve immediately.
