  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground all spice
  • 1 cup shredded carrots
  • For the cream cheese frosting: 1/2 cup butter, softened, 8 oz cream cheese, softened, 1 cup powdered sugar, 1 tsp vanilla extract, 3/4 tsp ground cinnamon, 1/2 cup crushed pecans, 1/4 cup shredded carrots

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease two loaf pans with butter or cooking spray.
  3. In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until creamy. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas and vanilla extract.
  4. In another bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and all spice.
  5. Gradually fold dry ingredients into wet mixture until just combined; gently stir in shredded carrots.
  6. Pour batter into prepared loaf pans and bake for about 35 minutes or until a toothpick comes out clean.
  7. Allow cooling in pans for about 10 minutes before transferring to wire racks.
  8. While cooling, prepare the cream cheese frosting by beating together softened butter and cream cheese until smooth. Gradually mix in powdered sugar until fluffy. Stir in vanilla extract and cinnamon.
  9. Once cooled completely, spread cream cheese frosting generously over each loaf. Sprinkle crushed pecans and shredded carrots on top for decoration.
