  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar

Instructions

  1. Shred the carrots and set aside to absorb excess moisture.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar with an electric mixer until fluffy. Add eggs one at a time followed by vanilla extract. Mix in the shredded carrots and oats.
