  • 6 oz Cream cheese (room temperature)
  • 3 TBSP White granulated sugar
  • 1 tsp Pure vanilla extract
  • 3 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar (packed light or dark)
  • 1/2 cup White granulated sugar
  • 1 cup Finely grated carrots (Make sure to grate them fresh. Don't use pre-shredded)
  • 2 Large egg yolks (room temperature)
  • 2 oz Cream cheese (room temperature) for filling
  • 2 TBSP Unsalted butter (room temperature) for filling
  • 3/4 cup Powdered sugar (sifted) for filling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together cream cheese, granulated sugar, and vanilla extract until creamy. In another bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
  3. Gradually mix the dry ingredients into the cream cheese mixture. Then stir in melted butter, brown sugar, grated carrots, and egg yolks until well combined.
  4. In a separate bowl, prepare the filling by beating cream cheese with butter and powdered sugar until smooth; add remaining vanilla extract.
  5. To assemble, flatten cookie dough in your palm, add 1 teaspoon of filling in the center, enclose it by rolling into a ball.
  6. Place on the baking sheet and bake for 12-15 minutes until lightly golden around the edges.
