  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 cup finely grated carrots
  • 1 cup chopped pitted dates
  • ¼ cup coconut milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a cake pan with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Beat in eggs one at a time and then stir in the vanilla extract.
  5. Gradually mix the dry ingredients into the wet mixture alternately with coconut milk until just combined.
  6. Fold in grated carrots and chopped dates gently.
  7. Pour batter into the prepared pan and bake for 35–40 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack.
