  • 2 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon kosher salt
  • ½ cup baking soda (for boiling)
  • 2 cups shredded cheese (cheddar, mozzarella, or your choice)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit until frothy (about 5 minutes).
  2. Whisk together flour and kosher salt in another bowl.
  3. Gradually add the flour mixture to the yeast mixture; stir until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  5. Place the dough in an oiled bowl, cover, and let it rise in a warm place for about 30 minutes until doubled in size.
  6. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  7. Boil 10 cups of water in a large pot; carefully add baking soda.
  8. Punch down risen dough, divide into pieces, roll into ropes, and shape into pretzels.
  9. Boil each pretzel in the baking soda solution for about 30 seconds; remove with a slotted spoon onto the baking sheet.
  10. Cut small slits in each pretzel and stuff them with shredded cheese.
  11. Brush with beaten egg and sprinkle with coarse sea salt.
  12. Bake for 15-20 minutes until golden brown.
