  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup tomato sauce (or salsa)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned; drain excess fat.
  2. Stir in onion and cook for 3 minutes. Add garlic and cook for another minute. Mix in chili powder, cumin, paprika, salt, pepper, and tomato sauce; simmer for 3-4 minutes.
  3. Lay tortillas flat and sprinkle half with cheddar and Monterey Jack cheese. Spoon the beef mixture on top and add more cheese before folding.
  4. Cook each quesadilla in a heated skillet with butter or oil for about 2-3 minutes per side until golden brown.
  5. Slice into wedges and serve warm with optional toppings.
