  • 2 pounds fresh spinach, washed and trimmed
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • ¼ teaspoon red pepper flakes (optional)
  • 2 large eggs, lightly beaten
  • ¼ cup breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil over medium heat; sauté chopped onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant (1 minute), then gradually add spinach until wilted. Drain excess liquid.
  3. In a large bowl, combine ricotta, mozzarella, Parmesan, Italian seasoning, salt, pepper, and beaten eggs; mix well.
  4. Fold the spinach mixture into the cheese mixture and transfer to the prepared baking dish. Top with breadcrumbs if desired.
  5. Bake for 25–30 minutes until bubbly and golden. Let cool for 5 minutes before serving.
