  • 1 cup diced yellow onion
  • 1 cup matchstick carrots
  • 1 cup diced celery
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 (12 oz) can evaporated milk
  • 1 (32 oz) quart chicken stock
  • 4 cups shredded cooked chicken
  • 2 cups all-purpose flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme
  • 3/4 cup whole milk
  • 4 tablespoons butter, melted

Instructions

  1. In a Dutch oven, melt butter over medium heat. Sauté onions, carrots, and celery for 5 minutes until softened. Add garlic and cook for another minute.
  2. Stir in flour for 1 minute to create a roux. Gradually add evaporated milk and chicken stock while stirring until smooth.
  3. If using raw chicken, add an extra cup of broth and simmer for 20 minutes until fully cooked. Shred the chicken and return it to the pot.
  4. For pre-cooked chicken, bring the soup to a boil before adding it along with thyme and pepper; simmer uncovered.
  5. In a bowl, combine dumpling ingredients to form a dough. Drop spoonfuls into the simmering broth and cover tightly. Cook for about 15 minutes until fluffy.
