  • 8 bone-in, skin-on chicken thighs
  • Water (enough to cover chicken)
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 4 celery stalks, diced
  • 1 cup pearl couscous
  • ⅓ cup fresh dill, chopped
  • Juice of 1 lemon
  • Your favorite seasoning salt

Instructions

  1. In a large pot, place chicken thighs and cover with water. Bring to a boil over medium heat. Reduce heat and simmer for about 1 hour until fully cooked.
  2. Remove chicken from the pot; add olive oil to the pot. Sauté onion and celery for 5–7 minutes until softened.
  3. Shred cooled chicken into bite-sized pieces and return it to the pot along with its juices.
  4. Stir in pearl couscous and seasoning salt; simmer for another 15 minutes until couscous is tender.
  5. Add chopped dill and lemon juice; season with salt and pepper to taste.
  6. Serve hot, drizzled with extra virgin olive oil alongside dukkah or crackers.
