  • 3 bell peppers (seeded and thinly sliced)
  • 1 medium yellow onion (thinly sliced)
  • 1 ¼ lb boneless chicken breasts (sliced into thin strips)
  • 2 Tablespoons olive oil
  • 3 cloves garlic (minced)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • Juice from one lime (about 2 Tablespoons)
  • 8 flour or corn tortillas

Instructions

  1. Combine all spices in a bowl and set aside.
  2. Heat 1 tablespoon of olive oil in a cast iron skillet over medium heat. Sauté bell peppers and onions for about 5-7 minutes until softened.
  3. Add minced garlic and half the spice mix; sauté for another 2-3 minutes.
  4. In the same skillet, add the remaining tablespoon of olive oil and chicken strips along with the rest of the spice mix and lime juice. Cook for 5-6 minutes until fully cooked through.
  5. Return sautéed vegetables to the skillet and stir everything together for an additional minute.
  6. Serve warm in tortillas with optional toppings like guacamole or salsa.
