  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp dried thyme or Italian seasoning
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, heat olive oil. Season chicken with salt, pepper, and thyme; cook for about 5-6 minutes per side until golden brown. Set aside.
  3. In the same skillet, sauté garlic for 1 minute. Add mushrooms and cook until softened (about 5 minutes). Stir in spinach until wilted.
  4. Pour in heavy cream and chicken broth; simmer until slightly thickened (3-4 minutes).
  5. Place chicken in the baking dish; pour sauce over it and top with cheeses.
  6. Bake for 15-20 minutes or until cheese is bubbly.
