  • ¼ cup soy sauce
  • 2 tablespoons honey or light brown sugar
  • 1 tablespoon minced fresh ginger
  • ½ red pepper, sliced thinly
  • ½ yellow pepper, sliced thinly
  • 2 cups broccoli florets
  • 1 large carrot, sliced thinly on diagonal
  • 1 package baby bella mushrooms, cleaned and sliced
  • Rice (brown or white) for serving
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • ½ teaspoon sesame oil
  • 2 tablespoons canola or vegetable oil
  • 1 bag (6 oz) snow peas
  • ½1 cup chicken broth (for desired thickness)
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. In a small bowl, whisk together cornstarch and water until smooth. Add soy sauce, chicken broth, honey (or brown sugar), minced ginger, and sesame oil; whisk to combine.
  2. Cut chicken into bite-sized pieces and marinate in the mixture while preparing vegetables.
  3. Slice all vegetables and set aside.
  4. Heat oil in a large skillet over medium-high heat; add marinated chicken and cook until no longer pink (about 5-7 minutes). Remove from skillet.
  5. In the same skillet, sauté peppers, broccoli, and carrots for about 5-7 minutes until slightly softened.
  6. Add mushrooms and snow peas; cook for another 3-5 minutes until tender.
  7. Return chicken to the skillet; adjust thickness with chicken broth as needed. Heat through for another 3-5 minutes.
  8. Serve over rice and garnish with sesame seeds and green onions.
