  • 1 lb cooked and diced chicken (tenderloins or rotisserie)
  • 1 can black beans (14.5 oz), rinsed
  • 1 can diced tomatoes (14.5 oz)
  • 1 small white onion, diced
  • 1 red bell pepper, diced
  • ½ packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • Juice of 1 lime

Instructions

  1. Preheat the oven to 350°F.
  2. Rinse the black beans and dice the onion and red bell pepper.
  3. In a mixing bowl, combine diced chicken, sour cream, lime juice, diced tomatoes, and taco seasoning. Stir until well mixed; fold in half of the cheddar cheese.
  4. Spray a 9×13 inch casserole dish with cooking spray. Layer black beans, onions, and bell peppers at the bottom; then spread the chicken mixture evenly on top.
  5. Sprinkle remaining cheddar cheese over the casserole.
  6. Bake for 28-30 minutes until bubbly and golden brown.
  7. Serve with optional garnishes like avocado slices, jalapeños, and tortilla chips.
