  • 1/2 cup (1 stick) unsalted butter, room temperature (113g)
  • 1 cup packed light brown sugar (200g)
  • 1 large egg, room temperature (56g)
  • 1 1/2 tsp vanilla extract or vanilla bean paste (6g)
  • 1/2 tsp fine salt (3g)
  • 1 cup all-purpose flour (125g)
  • 1 cup mashed overripe banana – about 2 large bananas (250g)
  • 3/4 cup chocolate chips, chopped (125g)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×9-inch baking pan.
  2. In a mixing bowl, cream together the unsalted butter and brown sugar until smooth. Add in the egg and vanilla extract; mix well.
  3. In another bowl, whisk together the flour and salt before gradually adding it to the wet mixture until fully combined.
  4. Gently fold in the mashed bananas and chocolate chips until evenly distributed.
  5. Pour the batter into the prepared pan and spread it out evenly. Bake for about 35 minutes or until golden brown, testing with a toothpick for doneness.
  6. Let cool for 10 minutes before transferring to a wire rack. Cut into squares and serve.
