  • 2 cups + 1 tablespoon all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10g fresh yeast
  • 3 large eggs
  • 2/3 cup unsalted butter, softened
  • 1 cup whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 3 tablespoons cornstarch
  • 3/4 cup mini chocolate chips

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast. Mix briefly.
  2. Add beaten eggs; knead on medium speed until smooth. Gradually add softened butter until the dough is dense and slightly sticky (about 20 minutes).
  3. Cover and let rise for 2 hours or until doubled in size.
  4. Heat milk and butter; infuse with the vanilla pod. Whisk together egg yolks, sugar, cornstarch, and pour in hot milk. Cook until thickened; cool.
  5. Roll out dough into a rectangle, spread cooled custard over half, sprinkle chocolate chips, fold over, cut into rectangles.
  6. Place on parchment-lined baking sheet; let rise for another 2 hours.
  7. Preheat oven to 350°F (180°C), brush with egg wash, bake for 10-12 minutes until golden brown.
