Instructions

  1. Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
  2. In a clean mixing bowl, beat the egg whites with cream of tartar on medium speed until frothy.
  3. Gradually add sugar one tablespoon at a time, then increase to high speed until stiff peaks form.
  4. Gently fold in salt, strawberry extract, and optional pink food coloring.
  5. Spoon or pipe small rounds of meringue onto the prepared sheet, ensuring space between each.
  6. Bake for about 1.5 hours; turn off the oven and cool with the door slightly ajar.
