  • 2/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped hazelnuts (for rolling)
  • 1/2 cup chocolate hazelnut spread
  • Extra whole hazelnuts for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together softened butter and granulated sugar in a large mixing bowl until fluffy. Stir in vanilla extract.
  3. In another bowl, whisk flour, cocoa powder, and salt together. Gradually add to the butter mixture until combined.
  4. Roll dough into balls about 1 inch in diameter and coat in chopped hazelnuts. Place on prepared baking sheets, spaced apart.
  5. Create indentations in the center of each cookie using your thumb or back of a spoon.
  6. Bake for 12-14 minutes until set but not hard to touch. Repress indentations if needed after baking.
  7. Fill each indentation with chocolate hazelnut spread while warm and optionally top with whole hazelnuts.
  8. Cool slightly on baking sheets before transferring to a wire rack to cool completely.
