  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • 12 oz semisweet chocolate, melted and cooled
  • 1/4 cup powdered sugar
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9-inch springform pan.
  2. In a mixing bowl, combine chocolate cookie crumbs with melted butter. Press this mixture into the bottom of the springform pan to form an even crust.
  3. Bake the crust for about 10 minutes. Remove from the oven and let it cool.
  4. In another bowl, beat softened cream cheese until smooth. Add granulated sugar and vanilla extract; mix well.
  5. Whip heavy cream until stiff peaks form. Fold in melted chocolate into the cream cheese mixture, then gently fold in whipped cream until combined.
  6. Pour the mousse filling over the cooled crust, smooth the top with a spatula, and refrigerate for at least 4 hours or overnight to set.
  7. Once set, carefully remove the sides of the springform pan and dust with a mixture of powdered sugar, cocoa powder, and salt before serving.
