  • 2 large handfuls baby spinach
  • 3 tablespoons milk (almond or regular)
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup Greek yogurt
  • 3 tablespoons oil
  • 1 cup white whole wheat flour
  • 1 teaspoon baking soda
  • ⅔ cup cocoa powder
  • ¼ teaspoon sea salt
  • ½ cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine bananas, spinach, and milk. Blend until smooth and transfer to a mixing bowl.
  3. Add the egg, sugar, vanilla, Greek yogurt, and oil to the blended mixture. Stir until well combined.
  4. In a separate bowl, mix flour, baking soda, cocoa powder, and sea salt. Gradually add this dry mixture to the wet ingredients and stir gently until just combined. Fold in chocolate chips.
  5. Line a muffin pan with liners and fill each cup with batter. Optionally sprinkle remaining chocolate chips on top.
  6. Bake for 18-22 minutes until a toothpick inserted comes out clean.
