  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a mixing bowl, combine cottage cheese, rolled oats, applesauce (or grated apple), egg, cinnamon, honey/maple syrup (if using), baking powder, and salt. Mix well.
  3. Allow the batter to rest for 5 minutes.
  4. Scoop the mixture into the mini muffin pan, filling each cup nearly to the top.
  5. Bake for 18–20 minutes until set and lightly golden.
