  • 3 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon cinnamon
  • 1/4 cup granulated sugar for cinnamon swirl
  • 1/2 cup powdered sugar for glaze
  • 1-2 tablespoons milk for glaze

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix mashed bananas, granulated sugar, brown sugar, melted butter, eggs, and vanilla until well combined.
  3. Sprinkle baking soda and salt over the mixture, then add flour. Stir gently until just combined.
  4. In a small bowl, mix granulated sugar and cinnamon for the swirl.
  5. Pour half of the batter into the prepared pan, sprinkle half of the cinnamon sugar mixture over it, then add the remaining batter and top with the rest of the cinnamon sugar.
  6. Swirl gently with a knife or skewer without overmixing.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10-15 minutes before transferring to a wire rack.
