  • 4 tablespoons melted vegan butter
  • ¾ cup maple syrup
  • 1 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 ½ cups all-purpose flour (regular or gluten-free)
  • 1 cup rolled oats
  • For the cinnamon swirl: 4 tablespoons melted vegan butter, ⅓ cup light brown sugar, 2 tablespoons cinnamon
  • For the frosting: ¾ cup powdered sugar, 2 tablespoons melted vegan butter, 2 oz softened vegan cream cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract.
  3. Combine baking powder, baking soda, cinnamon, salt, flour, and oats in another bowl. Stir into the wet mixture until combined.
  4. Pour half the batter into the loaf pan. Mix melted vegan butter, brown sugar, and cinnamon for the swirl; spread half over the batter.
  5. Add remaining batter on top and finish with the rest of the swirl mixture.
  6. Bake for 50–60 minutes until a toothpick comes out clean.
  7. Let cool before frosting with a blend of powdered sugar, melted vegan butter, and cream cheese.
