  • 1 shallot, minced

  • Extra virgin olive oil
  • 4 ounces sliced almonds (toasted)
  • Kosher salt and freshly ground black pepper

Instructions

  1. If starting from scratch, prepare your pan-seared citrus shrimp according to your preferred recipe. If using leftovers, warm them gently or serve chilled.
  2. In a large mixing bowl, combine the cooked shrimp with your choice of leafy greens.
  3. Drizzle with extra virgin olive oil and add citrus juice. If you have leftover shrimp sauce, include that as well. Toss to coat evenly.
